dc.description.abstractO sorgo (Sorghum bicolor (L). Moench) é um cereal cuja produção e consumo tem apresentado crescimento importante, tanto para a economia quanto para a saúde humana. Sua composição nutricional se assemelha ao milho, se destacando, no entanto, por ser excelente fonte de compostos fenólicos e também de fibras alimentares. Além disso, estudos indicam que peptídeos bioativos presentes no sorgo têm apresentado benefícios associados às Doenças e Agravos Não Transmissíveis (DANTs), porém os estudos ainda são recentes e insuficientes. Assim, o atual projeto pretendeu (i) avaliar a influência de diferentes métodos de processamento e/ou cocção na composição nutricional, funcional e perfil proteômico do grão de sorgo submetidos à diferentes processamentos e (ii) avaliar, especificamente, a influência do calor seco sobre os compostos bioativos e perfil proteômico da farinha de sorgo BRS 310, sem taninos. Os dados foram submetidos à análise de variância e aqueles que apresentaram diferença significativa (p≤0,05) foram comparados pelo teste Duncan na mesma probabilidade. Observou-se que a utilização do calor seco preservou o conteúdo de compostos bioativos, enquanto tratamentos com calor úmido promoveram perda de tais compostos. Tratamentos térmicos que utilizaram a pressão, seja em cocção úmida ou pipocagem, favoreceram a hidrólise das proteínas de sorgo, gerando percentual importante de peptídeos e proteínas de baixa massa molecular. O tratamento com calor seco também alterou o perfil proteico da farinha, produzindo peptídeos de 3,7 kDa em maior abundância. Concluímos que, tratamentos térmicos, em particular o calor seco, são capazes de aumentar o conteúdo de peptídeos no sorgo e preservar seus compostos com potencial antioxidante, no entanto, são necessários mais estudos que avaliem a capacidade desses peptídeos obtidos em promover benefícios à saúde.pt_BR

dc.description.resumoSorghum (Sorghum bicolor (L). Moench) is a cereal whose production and consumption has shown important growth, both for the economy and for human health. Its nutritional composition is similar to corn, standing out, however, for being an excellent source of phenolic compounds and also of dietary fibers. In addition, studies indicate that bioactive peptides present in sorghum have been related to benefits associated with Noncommunicable Diseases and Diseases (DANTs), but studies are still recent and insufficient. Thus, the current project intended to (i) evaluate the influence of different processing and / or cooking methods on the nutritional, functional and proteomic profile of the sorghum grain submitted to different processing and (ii) specifically evaluate the influence of dry heat on bioactive compounds and proteomic profile of BRS 310 sorghum flour, without tannins. The data were submitted to analysis of variance and those that showed a significant difference (p≤0.05) were compared using the Duncan test in the same probability. It was observed that the use of dry heat preserved the content of bioactive compounds, while treatments with moist heat promoted loss of such compounds. Heat treatments that use pressure, whether in wet cooking or piping, favored the hydrolysis of sorghum proteins, generating an important percentage of peptides and low molecular weight proteins. The dry heat treatment also changed the protein profile of the flour, producing peptides of 3.7 kDa in greater abundance. We conclude that heat treatments, in particular dry heat, are able to increase the content of peptides in sorghum and preserve its compounds with antioxidant potential, however, further studies are needed to assess the capacity of these peptides obtained to promote health benefits.pt_BR
